I don’t get it. Why do people peel vegetables? A good wash and they are ready to go. I don’t know if it is true the most food value is in or near the skin, but there is sbsolutely nothing wrong with eating a peel. When you dig a carrot out of the ground, do you peel it before you eat it raw? No. So why peel it just to cook it? Craziness!

I don’t grow my own veggies so I’ve never pulled one directly out of the ground to munch, but I do peel my raw carrots. Leave my potato and apple skins on though.

You need to try raiding someone’s garden next summer, even if you only steal one carrot, clean the dirt off, and eat it right there. You may never eat a cooked carrot agsin.

Honestly, I’d be more concerned about perfect-looking produce. Carrots fresh out of the garden often look that way. It’s a sign that they’ve been grown naturally!
