Want an absolutely fool proof easy chicken dinner?
Here it is.
Two large bone in, skin on breasts. Admittedly, these were huge.

Place in a large roasting pan with two inches of chicken broth. Bouillon cube based broth will work. Add 5 sections of celery, the upper half of the stalks with leaves. Season with paprika and parsley, Pat with butter.
Bake skin side up for 1/2 hour at 350, turn chicken over and bake for an hour and a half, basting a few times. If you like crispy skin, flip chicken over one more time and bake an additional 5 minutes.

Remove celery and thicken gravy.

Seen here served with garlic mashed red potatoes and honey glazed carrots.
Husband likes to eat the soggy celery, I don’t.
A simple satisfying meal.

It does look delicious. I’d do thighs instead of breasts personally, but I imagine the cooking time would be similar.

I like thighs for certain things, but the bone in breasts are quite tender this way.

I don’t eat soggy celery either. It’s there for the flavor not to be a gross side item on my plate. Your recipe looks delicious.

It’s all in the taster’s tongue, isn’t it. I love celery, raw, cooked, or soggy in chicken broth.
Did you know cooking cabbage in chicken broth does not stink up the kichen? It makes boiled cabbage a wonderful vegetable.

The chicken looks better on the plate but I would eat everything in that pan, right out of the pan. I’d take a break to make some gravy and then I would put all the mashed potatoes in it and eat it standing up in the kitchen, looking out the window.

An hour and a half? Hmmmm…that seems like a long time, but I suppose since it’s bathing in broth, it didn’t dry out. Looks great!

As long as your pan has enough broth for them to sit in liquid , they stay moist.
