This one is quick, easy and delicious. Use fresh ginger and fresh lemons for juice and zest… you won’t be disappointed. I used chicken tenderloins because I didn’t have breasts and served it on a bed of jasmine rice with fresh steamed green beans. Yum!

Being a born and bred Yankee I’d never heard of this.

And while I don’t drink soda very often, I admit I was intrigued.

A steep price to pay for a six pack, but curiosity got the better of me.

As did the Amazon seller who bought a local 12 pack out west and cut it in half for the idiot New Englander who was willing to overpay.

And while I’ll probably never buy another one, I did like the flavor. Not overly sweet with a nice pineapple tang. Guilty confession? My first thought was… add some vodka for a nice summer cooler.

I don’t know why, but I’m always searching for meatloaf variations. It’s a humble but satisfying meal if done correctly and this one sounded interesting.

While it was tasty, if I make it again I’d ditch the crock pot and just bake it instead. Way too difficult to remove once it was cooked.

      1. I like lemon and sorta like ginger, but not on my chicken. I just want chicken to taste like chicken!! 😉😉They love the highly spiced and/or flavored chicken.

  1. Importing pop from the west sounds like the days when folks thought Coors was a big deal because you couldn’t buy it around here. My sister, who lived in New Mexico, said the local take on the Coors slogan (“Brewed with pure Rocky Mountain spring water”) was “Brewed with pure Rocky Mountain goat piss.”

  2. Ha, I just discovered that there is nice key lime bottle I picked up nearby at a store and it goes deliciously with a finger of vodka. It helped immensely with the pain in my right hip that night. I won’t make it a habit and I am not much of a drinker but let me tell you I slept like a log that night.

  3. Cactus Coolers are delish, and your right about the vodka. I made a nice cocktail with this beverage and tequila. When I was working in NM my curiosity got the best of me as well. One day while on a lunch shopping excursion with my coworker, I came across this at the Albertsons (or maybe Kroger in you neck of the woods) and I bought a six pack. It was a nice surprise, and here I can get it local. That lemon chicken recipe is worth a try. As is anything meatloaf related, I just love me a good meatloaf recipe, although the piece of beef is sky high right now 🫤

  4. Now I may have to buy Cactus Cooler today when I go grocery shopping since Arizona is on the list of states. We also like Fresca, which adding a touch of vodka also works well. 😅 Yours is the third blog I read about food this morning and I’m so hungry!!! I hope I can find something to eat before I go to the store!
