Nubble, not nibble.

Leaving York Beach the other day, we headed north along the coastal route.

Past the park…

And down to Cape Neddick….

.

.

Home to the (famous in these parts) Nubble Light.

.

.

Built in 1878 at the cost of $15,000, Nubble is still in use today and contains its original Fresnel lens.

Fun fact?

Nubble Light is a famous American icon and a classic example of a lighthouse. An image of the lighthouse is included on the Voyager Golden Record carried by the Voyager spacecraft as one of Earth’s most prominent man-made structures or natural features, alongside features such as the Great Wall of China and the Taj Mahal, to be viewed should it fall into the hands of intelligent extraterrestrials.

And though my picture looks like you could just walk right up and explore, the lighthouse actually sits on an island and is inaccessible to the public.

No matter, the scenery is pretty sweet from this side as well.

Lunching in York….

A blueberry mule by the ocean is a beautiful thing.

Even if the restaurant’s decor leaves a bit to be desired.

Lobster Cove got good reviews for its seafood so we gave it a whirl.

Not too shabby.

My clam chowder was excellent and aside from the weird onion ring topping on my husband’s beloved French onion soup, his was tasty as well.

Fried sea scallops for me, a decadent seafood casserole in lobster bisque for my spouse and we were happy campers.

Since our weather has been crazy beautiful?

Road trip!

York Beach, a popular tourist destination during the summer but wonderfully deserted this time of year.

It’s a typical seaside community that we avoid like the plague during peak season.

But on a bright November afternoon?

I’m not a prude… but are these really necessary?

It probably won’t surprise you to learn my algorithms often give me cocktail recipes… which spellcheck just changed to ‘road pies’ for some inexplicable reason… and while I’m always up for new cocktail combos?

Things have taken a decidedly blue turn lately.

Here’s what makes me see red –

I’m cooking, carefully following a recipe and laying out all my ingredients… only to discover that the 12 ounce can/bag/box of whatever I need is now 10 ounces due to shrinkflation and I need to make another run to the grocery store to pick up another full can/bag/box of whatever it is I need to get that missing 2 ounces.

Grrr.

Pay more/get less drives me insane. Add the damn .40 cents to the price and give me a full portion of the product so I don’t have to buy 2 and end up wasting most of the second.

The husband and I made a trip to York recently to visit the Stonewall Kitchen mothership.

.

.

It’s a huge store with a cafe that offers cooking classes as well.

.

.

I’ve always wanted to go because I love their products and this is the only place you can find their entire line in one place. The tasting stations are a helpful way to avoid buying things you don’t like and since the holidays are approaching there were decorations scattered throughout.

.

.

Who knew Santa liked martinis?

I admit the husband wasn’t as thrilled with the excursion as I was.

But he’s enjoying the results all the same.

A yummy I have to share…

My husband usually cringes when I announce “New recipe for dinner tonight!” as many of them don’t live up to the hype. But I found a nice one the other day and thought I’d share.

.

Creamy, cheesy goodness for the win.

.

.

I always try to follow the ingredient list to the letter the first time out, but my spouse isn’t crazy about ricotta cheese so I blended half cottage/half ricotta and it was fabulous.

.

.

Though when it came time to filling and rolling the noodles, I realized I had a problem.

I didn’t skimp… and would run out of filling long before the desired 8.

.

.

So I had to make another half a bowl. This was the perfect amount … I recommend starting off that way if you want to give this one a whirl.

.

.

Here are my tweaks –

I used a cooked rotisserie chicken, rosemary and garlic seasoned. I chopped, didn’t shred.

Recipe calls for 2 cups Alfredo sauce but to be honest I think it could use more. We like things saucy.

I’ll be making this one again and think I might add some fresh spinach next time I roll.

Please use fresh garlic.

Doing dishes the other morning I noticed movement on the farm across the street.

A young buck had been startled and was running across the field in front of the not yet finished greenhouses.

They sure do blend in this time of year.

In other news I saw an advertisement for a product I certainly could have used back in the day.
